        <Text language="fre">&lt;p&gt;Le changement climatique a de nombreux effets sur la vigne, dont un développement plus précoce conduisant éventuellement à une plus grande vulnérabilité aux gelées de printemps et à une avancée certaine de la période de maturation des raisins.&lt;/p&gt;&lt;p&gt;Par ailleurs, des évènements climatiques extrêmes de plus en plus intenses, comme les vagues de chaleur ou des pluies torrentielles, causent des dégâts importants. Les stress hydriques — plus prononcés dans le sud de la France — ont des effets marqués sur les rendements. Tous les vignobles français sont concernés. En conséquence, les caractéristiques des vins se modifient avec plus d’alcool, des baisses d’acidité et des modifications aromatiques. En parallèle, de nouveaux territoires deviennent favorables à la plantation de la vigne.&amp;nbsp;&lt;/p&gt;&lt;p&gt;Face à ces enjeux, la clé est de s’adapter plus rapidement. Mais quelles sont les voies à suivre et quelles décisions prendre, que ce soit aux échelles locales ou nationale ?&lt;/p&gt;&lt;p&gt;Après dix ans de recherches sur l’adaptation de la filière Vigne et vin française au changement climatique, le projet Laccave, porté par INRAE, s’est achevé en 2021. Cet ouvrage en synthétise les résultats en explorant les leviers d’action possibles : nouveaux cépages, amélioration de la gestion du sol, de l’eau et des modes de conduite, réorganisation du territoire, innovations œnologiques, nouvelles réglementations...         <Text language="eng">&lt;p&gt;Grapevine is being affected by climate change in many ways, from earlier plant development – which could make vines more vulnerable to spring frosts – to earlier grape ripening.&lt;/p&gt;Increasingly intense extreme weather events, such as heat waves and torrential rain, are also causing major damage to vines. Water stress, which is more pronounced in southern France, has a marked effect on yields. All French vineyards must contend with these issues. Wine characteristics are also changing, with higher alcohol levels, lower acidity and different aromas becoming more common. Meanwhile, new areas are becoming suitable for winegrowing.&lt;p&gt;&lt;/p&gt;&lt;p&gt;The key to addressing these issues is to adapt faster. But how exactly should we do this? What decisions at the local or national level should be taken?&lt;/p&gt;&lt;p&gt;After ten years of research into adapting the French vine and wine industry to climate change, the LACCAVE project, led by INRAE, came to an end in 2021. This book summarizes the results of that project and explores possible levers for action, including new grape varieties; improved soil, water and training system management; reorganization of winegrowing areas; oenological innovations; and new regulations.         <Text language="fre">&lt;p&gt;Le changement climatique a de nombreux effets sur la vigne, dont un développement plus précoce conduisant éventuellement à une plus grande vulnérabilité aux gelées de printemps et à une avancée certaine de la période de maturation des raisins.&lt;/p&gt;&lt;p&gt;Par ailleurs, des évènements climatiques extrêmes de plus en plus intenses, comme les vagues de chaleur ou des pluies torrentielles, causent des dégâts importants. Les stress hydriques — plus prononcés dans le sud de la France — ont des effets marqués sur les rendements. Tous les vignobles français sont concernés. En conséquence, les caractéristiques des vins se modifient avec plus d’alcool, des baisses d’acidité et des modifications aromatiques. En parallèle, de nouveaux territoires deviennent favorables à la plantation de la vigne.&amp;nbsp;&lt;/p&gt;&lt;p&gt;Face à ces enjeux, la clé est de s’adapter plus rapidement. Mais quelles sont les voies à suivre et quelles décisions prendre, que ce soit aux échelles locales ou nationale ?&lt;/p&gt;&lt;p&gt;Après dix ans de recherches sur l’adaptation de la filière Vigne et vin française au changement climatique, le projet Laccave, porté par INRAE, s’est achevé en 2021. Cet ouvrage en synthétise les résultats en explorant les leviers d’action possibles : nouveaux cépages, amélioration de la gestion du sol, de l’eau et des modes de conduite, réorganisation du territoire, innovations œnologiques, nouvelles réglementations...         <Text language="eng">&lt;p&gt;Grapevine is being affected by climate change in many ways, from earlier plant development – which could make vines more vulnerable to spring frosts – to earlier grape ripening.&lt;/p&gt;Increasingly intense extreme weather events, such as heat waves and torrential rain, are also causing major damage to vines. Water stress, which is more pronounced in southern France, has a marked effect on yields. All French vineyards must contend with these issues. Wine characteristics are also changing, with higher alcohol levels, lower acidity and different aromas becoming more common. Meanwhile, new areas are becoming suitable for winegrowing.&lt;p&gt;&lt;/p&gt;&lt;p&gt;The key to addressing these issues is to adapt faster. But how exactly should we do this? What decisions at the local or national level should be taken?&lt;/p&gt;&lt;p&gt;After ten years of research into adapting the French vine and wine industry to climate change, the LACCAVE project, led by INRAE, came to an end in 2021.
